Pear & Thyme Fizz

INGREDIENTS

2 cups good-quality apple juice

1 ripe but firm pear, very thinly sliced

12 sprigs fresh thyme

1/4 cup orange-flavored liqueur 

1 bottle sparkling wine 

Instructions:

In a pitcher, combine apple juice, pears, thyme, and liqueur. Stir together, then refrigerate for 2 – 4 hours to allow the pears and thyme to infuse the juice with flavor.

Divide between 6 champagne flutes, discarding thyme, then fill the remainder of each glass with champagne. Garnish each glass with a sprig of fresh thyme. Bottoms up!

 

Apple Cider Bellinis

INGREDIENTS

2 ounces apple cider

Prosecco, Cava or other Sparkling Wine

Fresh Thyme Sprigs or Fresh Rosemary Sprigs

Instructions:

Fill four champagne flutes with 1/2-ounce each of apple cider. Fill the glasses with sparkling wine and garnish each with a fresh thyme or rosemary sprig.

Blood Orange Jalapeno Margaritas

 INGREDIENTS

One 1/4-inch slice jalapeno pepper

3 ounces fresh-squeezed blood orange juice

1 ounce freshly squeezed lime juice

4 ounces good quality Tequila

2 ounces Cointreau

Instructions:

Combine the slice of jalapeno, the blood orange juice and the lime juice in a cocktail shaker. Muddle the jalapeno in the juice to release the heat. Add ice, the Tequila, and the Cointreau. Shake vigorously and strain into two cocktail glasses filled with ice. Garnish with a slice of blood orange.

 

Ginger Pumpkin Bourbon Fizz with Cinnamon Sugar

INGREDIENTS:

1 tablespoon fresh ginger, grated

1/2 cup granulated sugar + 3 tablespoons

1/2 cup water

1/2 cup bourbon

2 bottles pumpkin beer

1 teaspoon cinnamon

lemon wedge

Ice

Instructions:

In a small saucepan, combine ginger, 1/2 cup sugar, and water. Bring to a slight simmer and stir until sugar has dissolved about 2 minutes. Remove from heat and cool completely.

Combine cinnamon and 3 tablespoons sugar and pour it onto a plate. Next, take the lemon wedge and rub the rim of the glass. Take the glass and dip the rim into the cinnamon sugar mixture. Add the ice cube, 1/4 cup of bourbon (or less), some of the simple syrup (about 2 to 3 tablespoons), and fill the remaining with the pumpkin beer. Repeat with remaining glasses.
